Preparing the Chicken

Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breast with salt and black pepper. Dip each piece into beaten eggs, then coat with breadcrumbs.

Bake the Chicken
Place the breaded chicken on a baking sheet lined with parchment paper and bake for 20-25 minutes or until the chicken is cooked through and golden brown.
Assembling the Burro

Prepare the Tortilla
Warm the flour tortillas in a pan over low heat for a few seconds on each side to make them pliable.

Add Fillings
Place the baked chicken in the center of each tortilla. Top with cheddar cheese, lettuce, sliced tomato, and mayonnaise.

Wrap the Burro
Fold the sides of the tortilla over the fillings, then roll from the bottom to the top to create a burrito shape.
Preparing the Fries

Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the frozen french fries in batches until golden brown and crispy, about 4-5 minutes.

Remove fries from the oil and drain on paper towels. Season with salt to taste.
