    Prepare the Mackerel

    Preheat your grill or broiler to high heat. Pat the mackerel fillets dry with a paper towel and season both sides with salt and black pepper.

    Grill the Mackerel

    Brush the mackerel fillets with olive oil and place them skin-side down on the grill. Cook for about 4-5 minutes until the skin is charred and crispy. Flip and cook for an additional 3-4 minutes until the flesh is opaque and flakes easily.

    Sauté the Chanterelles

    While the mackerel is grilling, heat a skillet over medium heat. Add a small amount of olive oil and sauté the chanterelle mushrooms until they are tender and golden brown, about 5-7 minutes.

    Combine and Serve

    Remove the mackerel from the grill and drizzle with chanterelle vinegar. Serve the charred mackerel topped with sautéed chanterelles and a dollop of Japanese wasabi paste. Garnish with lemon wedges on the side.
