    Chill glass

    Place the coupe or martini glass in the freezer for at least 5 minutes or fill it with ice water while you prepare the drink to ensure the finished Manhattan is properly chilled.

    Measure and combine

    Add 2 oz rye whiskey and 1 oz sweet vermouth to the mixing glass. Add 2 dashes of Angostura bitters.

    Add ice and stir

    Fill the mixing glass about three-quarters full with ice cubes (about 6 cubes). Using a bar spoon, stir the mixture gently for 20–30 seconds (roughly 20–30 full spoon turns) until the outside of the mixing glass feels very cold and the drink is properly diluted and chilled.

    Strain

    Discard the ice or water from the chilled serving glass. Using the Hawthorne or julep strainer, strain the stirred cocktail into the chilled coupe or martini glass.

    Garnish and finish

    Drop 1 maraschino cherry into the cocktail. If using orange peel, express the oils by holding the peel over the drink skin-side down and giving it a quick twist, then rub the peel around the rim and drop or place it on the surface as an additional garnish.

    Serve immediately. Sip and enjoy responsibly.

    Use the jigger to measure whiskey and vermouth. Use a bar spoon to stir and a strainer to pour the cocktail cleanly into the chilled glass. A peeler or channel knife helps produce an even orange twist if using.
