Cocktail
Optional: Tobacco Smoke Rinse
Method
Cocktail
- 1
Mix
Chill a rocks glass by adding a large ice cube or a few small cubes and setting aside. In a mixing glass add 2 oz Bulleit 10 Year Bourbon, 0.5 oz aged dark rum, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, 3 dashes Jamaican-style bitters, and 2 dashes tobacco bitters.
- 2
Stir & dilute
Add a generous amount of ice to the mixing glass and stir briskly for 20–30 seconds (about 20–25 full strokes) until the mixture is well chilled and properly diluted (to taste).
- 3
Prepare glass & strain
Discard the ice from the chilled rocks glass. Strain the cocktail from the mixing glass into the rocks glass over one large ice cube (or a couple of fresh large cubes).
- 4
Optional: Tobacco Smoke Rinse
- 5
If you want a light tobacco aroma: place a small metal funnel or a coupe over the rocks glass inverted. Put a pinch of cured pipe tobacco or smoking chips on a heatproof surface and briefly ignite with a lighter until smoking. Capture the smoke under the glass for 10–20 seconds to rinse the interior, then discard the tobacco. Proceed to pour the strained cocktail into the smoked glass. Alternatively, you can briefly flame the pinch of tobacco and invert the glass over the smoke to impart aroma before adding ice and the cocktail.
