    Prepare the Vegetables

    Peel and dice the potatoes, celery, onion, bell pepper, and carrots into small, even pieces.

    Cook the Bacon

    In a large pot, cook the bacon slices over medium heat until crispy. Remove and set aside on a paper towel to drain. Once cooled, crumble the bacon.

    Sauté the Vegetables

    In the same pot, add the diced onions, celery, bell pepper, and carrots. Sauté for about 5 minutes until softened.

    Add Potatoes and Broth

    Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce to a simmer. Cook for about 20-25 minutes, or until the potatoes are tender.

    Add Cheeses

    Stir in the cheddar and Swiss cheese until melted and well combined. Season with salt and pepper to taste.
