Prepare the Chicken
Season the chicken breasts with salt and black pepper. Set up a breading station with three bowls: one with flour, one with the beaten egg, and one with breadcrumbs.

Bread the Chicken
Dredge each seasoned chicken breast in flour, then dip into the egg, and finally coat with breadcrumbs. Ensure they are well-coated.

Fry the Chicken
Heat oil in a deep skillet over medium-high heat. Once hot, carefully add the breaded chicken breasts and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Avocado and Tomato
Slice the avocado and tomato into even slices. Set aside.

Assemble the Sandwich
Toast the buns lightly. Spread 2 tablespoons of pepper jelly on the bottom half of each bun. Place a fried chicken breast on top, followed by lettuce leaves, avocado slices, and tomato slices. Top with the other half of the bun.
