    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, then crumble into pieces.

    In the same skillet, add the chopped shallots and sauté in the bacon grease until golden brown. Remove and set aside.

    In a separate pot, steam the fresh spinach until wilted, about 3-4 minutes. Season with salt to taste.

    Pat the scallops dry and season with salt and pepper. In a large skillet, heat olive oil over high heat. Add scallops and sear for 2-3 minutes per side until golden brown and cooked through.

    In a small saucepan, melt butter over medium heat. Stir in lemon juice and black pepper, mixing well until heated through.
