Prepare the Breading
In a shallow bowl, combine the flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well.

Prepare the Catfish
Dip each catfish fillet into the buttermilk, allowing excess to drip off. Then, dredge it in the flour-cornmeal mixture, coating it evenly.

Heat the Oil
In a large skillet, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully add the battered catfish fillets to the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy.

Drain and Serve
Remove the fried catfish from the oil and drain on paper towels. Serve hot over shrimp and andouille creole sauce alongside Lowcountry cornbread.
