Mix the Ingredients
In a medium bowl, combine the mayonnaise, finely chopped dill pickles, capers, lemon juice, and Dijon mustard. Stir until well combined. Season with salt to taste. Cover and refrigerate until ready to serve.

Fry the Potatoes
Heat 4 cups of vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked potatoes and pat them dry with paper towels. Fry the potatoes in batches until golden and cooked through, about 5-7 minutes. Remove with a slotted spoon and let drain on paper towels. Season with salt to taste.

Make the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold sparkling water while whisking until the batter is smooth and thick, resembling pancake batter.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Batter and Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, frying 2-3 pieces at a time, until golden brown and cooked through, about 4-5 minutes. Remove and let drain on paper towels.
