Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the semi-sweet chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave at 30-second intervals, stirring until smooth.

  3. 3

    Mix Dry Ingredients

In a separate bowl, whisk together the powdered sugar, flour, and a pinch of salt.

  4. 4

    Combine Ingredients

Once the chocolate and butter mixture is melted and smooth, remove it from heat. Stir in the powdered sugar mixture until combined. Then add the eggs, egg yolk, and vanilla extract, mixing until just combined.

Baking

  1. 5

    Fill Ramekins

Divide the cake batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 6

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving

  1. 7

    Cool and Serve

Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate. Serve warm, topped with a scoop of vanilla ice cream and fresh berries.
