Pulled Pork Preparation

Prepare the Pork
Rub the pork shoulder with smoked paprika, salt, black pepper, and cayenne pepper. Make sure it is evenly coated.

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add chopped onion, minced garlic, water, and apple cider vinegar. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix in the BBQ sauce. Let it cook for an additional 30 minutes on low.

Make the Dressing
In a large bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

Combine and Chill
Add the shredded cabbage and carrots to the dressing, and toss to coat evenly. Cover and refrigerate for at least 30 minutes before serving.

Assemble the Sandwich
Toast the hamburger buns if desired. Layer a generous amount of the BBQ pulled pork on the bottom half of each bun. Top with coleslaw and add pickles. Place the top half of the bun over the fillings.

Serve the BBQ pulled pork sandwiches hot with extra coleslaw on the side.
