Method
Brew the Coffee Base
Measure & Rinse
Measure 1.5 cups coarsely ground coffee and set the brewer's paper filter in place (if used). Rinse the paper filter briefly with hot water to remove papery taste and preheat the brewer; discard the rinse water.
Brew
Add the ground coffee to the brewer. Use 12 cups (about 2.8–3 liters) of fresh cold water and brew according to your drip brewer's normal cycle. Aim for a medium-strong brew that will hold up when diluted or iced. Total brew time will vary by machine (about 6–8 minutes).
Cool Slightly
When brewing finishes, let the coffee sit for 5 minutes to allow grounds to settle and the temperature to drop slightly before transferring to thermoses. This helps prevent steam buildup in travel containers.
Filter & Transfer
If desired, pour the brewed coffee through a fine-mesh sieve or secondary paper filter to remove any stray fines. Immediately divide the coffee between the insulated travel carafes (3 carafes for roughly 32 oz capacity each, or fewer for larger carafes) while still warm to preserve heat. Leave about 0.5–1 inch headspace when sealing.

Combine 3 cups whole milk and 1/2 cup heavy cream in a saucepan over medium-low heat. Warm to 150–160°F (65–71°C) but do not boil. Stir occasionally to prevent skin or scalding. Remove from heat and stir in 1 tsp vanilla extract.
Cold Milk for Iced
For iced coffee servings, chill milk mixture or use cold whole milk and heavy cream combined (same proportions) and keep refrigerated until assembling iced cups. You can combine milk and cream in a sealed bottle and shake before serving to mix well.

Make or Warm Syrups
Prepare simple syrup ahead by dissolving equal parts sugar and water over low heat until dissolved; cool before bottling. For brown sugar syrup, simmer brown sugar with a little water until dissolved and cool. Store syrups in bottles for easy transport.
Season
Label bottles so servers can add sweetener to taste. Provide ground cinnamon and cocoa powder for sprinkling. Typical starting portions: 1–2 tbsp simple syrup per 8 oz cup, or 1 tbsp brown sugar syrup for a deeper caramel note; adjust to preference.

To serve hot: pour 8–12 oz of brewed coffee into a paper cup or mug. Add 2–4 oz warmed milk/cream mixture if desired (for latté-style). Stir in 1 tbsp simple syrup or to taste. Top with a light dusting of cinnamon or cocoa. Cap cups for travel.
Iced Coffee Traveler Serving
To serve iced: fill cup with ice (about 6–8 oz by volume). Pour 8 oz chilled brewed coffee over ice, then add 2–3 oz cold milk/cream mixture to taste. Stir and add 1–2 tbsp simple syrup or brown sugar syrup to sweeten. Garnish with a sprinkle of cocoa or cinnamon if desired.
Transport & Safety
Seal insulated carafes immediately after filling to preserve temperature. Keep refrigerated any milk/cream thermoses if not used within 2 hours. Label containers with brew time. For hot service, handle carafes with insulated sleeves or towels and warn recipients the contents are hot.
Cleanup & Storage
Empty and rinse carafes, milk bottles, and syrups as soon as practical. Brewed coffee will keep in a sealed thermos for up to 12–24 hours but is best consumed within 6–8 hours for flavor. Refrigerate any leftover milk/cream and syrups; discard milk that has been left at room temperature for more than 2 hours.
