Cook the Polenta
In a large pot, bring 4 cups of water to a boil. Stir in the salt and slowly whisk in the polenta. Reduce heat to low and cook, stirring frequently, for about 15-20 minutes until thickened.

Cool and Shape Polenta
Pour the cooked polenta into a greased baking dish, spreading it evenly. Allow it to cool for at least 30 minutes or until firm.

Cut into Fries
Once cooled, cut the polenta into fry-shaped sticks.

In a bowl, combine cornstarch, black pepper, and paprika. Dredge each polenta fry in the cornstarch mixture until evenly coated.
