Pesto Preparation
Make the Basil Parmesan Pesto
In a food processor, combine the fresh basil, grated Parmesan cheese, garlic cloves, olive oil, lemon juice, salt, and pepper. Blend until smooth and set aside.
Roasting and Assembly
Roast the Vegetables
Preheat the oven to 400°F (200°C). In a large bowl, toss the cubed yams, chopped kale, and sliced onion with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes, or until the yams are tender and lightly browned.
Combine and Bake
Once the vegetables are roasted, remove them from the oven and mix them with the basil parmesan pesto. Transfer the mixture to a baking dish, sprinkle with shredded mozzarella cheese and crumbled goat cheese. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
