Make the Tomato Sauce
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the plum tomatoes (crushed) and salt. Simmer for about 15 minutes until thickened. Set aside.

Prepare the Capers
In a small pan, heat 1 tablespoon of olive oil over medium heat. Add the capers and fry until crispy, about 3-4 minutes. Remove and drain on paper towels.

Preheat the Oven
Preheat your oven to 250°C (482°F) or as high as it will go.

Assemble the Pizza
On a floured surface, stretch out the pizza dough to your desired shape and thickness. Spread the rich plum tomato sauce evenly over the base. Tear the mozzarella and bocconcini into pieces and scatter them over the sauce. Add fresh basil leaves.

Bake the Pizza
Transfer the assembled pizza to a pizza stone or baking tray. Bake in the preheated oven for about 10-12 minutes, or until the crust is golden and the cheese is bubbling.

Finishing Touches
Once baked, remove the pizza from the oven and sprinkle the crispy fried capers on top. Add a drizzle of olive oil and season with black pepper to taste.

Slice the pizza and serve hot, garnished with additional fresh basil if desired.
