Dough Preparation

Make the Dough

In a large bowl, mix the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.

Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

Prepare the Filling

Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and mash them.

In a bowl, combine the mashed potatoes, chopped wild leeks, cream cheese, horseradish, salt, and pepper. Mix until well combined.

Assembling the Croquettes

Shape the Croquettes

Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a round cutter.

Place a spoonful of filling in the center of each circle. Fold the dough over and seal the edges using a fork.

Cooking

Fry the Croquettes

Heat vegetable oil in a large skillet over medium heat. Fry the croquettes in batches until golden brown on both sides, about 3-4 minutes per side.

Remove from oil and drain on paper towels.

Serve the croquettes hot, topped with sliced scallions, pickled shallots, and a dollop of sour cream.
