Meatballs Preparation
Mix Ingredients
In a large bowl, combine the ground pork, cornbread croutons, pine nuts, asiago cheese, chili flakes, minced garlic, egg, salt, and black pepper. Mix until evenly combined.
Form Meatballs
Shape the mixture into meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
Bake Meatballs
Preheat the oven to 200°C (400°F). Bake the meatballs for 20-25 minutes or until cooked through and golden brown.
Marinara Sauce Preparation
Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.
Add Tomatoes and Seasoning
Stir in the canned crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer and let cook for 15 minutes, stirring occasionally.
Add Fresh Basil
Stir in the fresh basil just before removing from heat.
Combine and Serve
Combine Meatballs and Sauce
Once the meatballs are cooked, add them to the marinara sauce and simmer for an additional 5 minutes to allow flavors to meld.
Serve
Serve the pork meatballs marinara hot, garnished with additional asiago cheese if desired.
