Method
Make Simple Syrup
Prepare sugar syrup
Combine granulated sugar and 1/2 cup cold water in a small saucepan. Warm over medium-low heat, stirring constantly, until the sugar is fully dissolved and the mixture is clear. Do not boil. Remove from heat and let the syrup cool to room temperature (about 10–15 minutes).
Optional additions to syrup
While the syrup is still warm but off the heat, stir in the vegetable glycerin (if using) to give a slightly fuller mouthfeel and help the sweet flavor linger. If using citric acid, dissolve it into the cooled syrup to add extra tartness; stir until fully dissolved.
Assemble Sprite-style Soda
Mix citrus and syrup
In a large pitcher, combine the fresh lemon juice and fresh lime juice. Add the cooled simple syrup and stir to combine. Taste and adjust: for a brighter profile add up to 1/2 tsp more citric acid or an extra 1/2 tbsp citrus juice if desired.
Add carbonated water
Slowly pour 4 cups of well-chilled carbonated water into the pitcher, stirring gently once or twice to integrate the syrup-citrus mixture without losing too much carbonation. Do not stir vigorously.
Notes on proportions
This recipe yields a homemade lemon-lime soda with approximate sweetness and tartness similar to Sprite. If you prefer sweeter soda, increase simple syrup by 1–2 tbsp. For a tarter soda, add up to 1/2 tsp extra citric acid or more fresh lime/lemon juice.
