Method

Prepare filling
In a small bowl, combine the shredded cheddar, grated carrot and chopped baby spinach. Mix until evenly distributed. For very young children (0–12 months) you can reduce the cheese amount to 2 tablespoons and finely mash the vegetables into the cheese for a softer texture.
Assemble
Lay out 4 small tortillas. Divide the cheese-veg mixture evenly among 2 tortillas, spreading it over one half of each tortilla. Fold each tortilla over to make a semicircle (or place the remaining tortilla on top to make a full sandwich). Press gently so the filling is compact.
Cook
Heat a nonstick skillet over medium-low heat and add the butter or oil. When warm, place the folded quesadillas in the skillet. Cook for 2–3 minutes per side, pressing gently with a spatula, until the tortilla is lightly golden and the cheese is melted. Lower the heat if the tortilla browns too quickly to ensure the filling softens fully (important for young children).
Cool and cut
Transfer to a plate and let cool for 3–5 minutes. Cut into small finger-friendly wedges appropriate to the child's chewing ability (for infants, cut into very small pieces or shred). Ensure pieces are cool enough before serving.
Apple Yogurt Purée (no added sugar)
Place the peeled, cored and chopped apple in a small saucepan with 2 tablespoons (30 ml) water. Cook over low heat, covered, for 6–8 minutes until the apple is very soft. Mash with a fork or blend briefly for a smoother purée.
Allow the apple to cool slightly, then stir in the plain yogurt and ground cinnamon until smooth. Taste and adjust cinnamon as needed. Serve lukewarm or chilled. For babies under 1 year, ensure the yogurt is full-fat and consult pediatric guidance for introducing dairy.
Simple Avocado Mash (for dipping or spreading)
Scoop the avocado flesh into a small bowl. Add lemon juice and a small pinch of salt. Mash with a fork until smooth or leave a little texture depending on the child's chewing ability.
Serve immediately alongside quesadilla wedges for dipping or spread a thin layer inside the quesadillas before cooking for extra flavor and healthy fat.
