Carbonated Soft Drinks

Serve Sprite, Coke, or Diet Coke chilled (about 1 cup / 8 fl oz per serving) in a clean glass over ice if requested. No preparation required beyond chilling and pouring.

Bottled Waters

Serve coconut water or sparkling water chilled in a clean glass or in the original bottle. No additional preparation required.

Hibiscus Fresca

Make hibiscus concentrate (if not pre-made)

Combine 0.5 cup dried hibiscus or hibiscus syrup with 0.25 cup sugar and 1 cup hot water; stir until sugar dissolves. If using dried hibiscus: steep 2 tablespoons dried hibiscus in 1 cup boiling water for 10 minutes, strain and dissolve sugar into the hot infusion to make a concentrate. Cool to room temperature, then refrigerate until cold.

To assemble one serving: in a glass filled with 1 cup ice, add 2 to 3 tablespoons hibiscus concentrate (adjust sweetness to taste), top with 3/4 cup cold water or chilled sparkling water for a fizzy version, stir gently, garnish with a lime wedge if desired, and serve immediately.

Chrysanthemum Tea

Bring 2 cups water to a near boil. Add 2 tsp dried chrysanthemum flowers and steep for 5 minutes covered. Strain flowers out. Sweeten with 1 tsp honey or rock sugar while warm, if desired. For iced service, cool to room temperature then pour over a glass of ice and serve.

Thai Lime Tea

Brew Thai tea: steep 2 tbsp Thai tea mix in 1 cup near-boiling water for 5 minutes, then strain. Add 2 tsp sweetened condensed milk and 1 tsp fresh lime juice to the hot tea and stir until combined. Let cool slightly, then pour over a glass filled with ice. Stir before serving so the condensed milk and lime distribute evenly. Adjust condensed milk and lime to taste.

Viet Ice Coffee

Place 2 tbsp sweetened condensed milk into the bottom of a serving glass. Brew coffee: use 2 tbsp coarse Vietnamese coffee grounds with 1/4 cup hot water (or use a phin filter) and brew directly into the glass over the condensed milk. If using a filter, allow coffee to drip slowly until extraction is complete (about 4–6 minutes). Stir to combine, then fill the glass with 1 cup ice and serve immediately. For a stronger drink, use less water or more grounds; adjust condensed milk to taste.
