Gather equipment

Get a large heavy-bottomed pot with a tight-fitting lid (3–4 quart), a long-handled spoon, a large heatproof bowl, and a measuring cup/spoons. If you have a large saucepan with high sides, that works too.

Measure ingredients

Measure 1 cup popcorn kernels, 2 tablespoons neutral oil, and 1 teaspoon salt. If using butter or other toppings, have them ready and warmed/melted.

Cooking the popcorn

Heat oil and test kernel

Place the pot over medium-high heat. Add 2 tablespoons oil and tilt the pot so the oil coats the bottom. Drop 2–3 popcorn kernels into the oil and cover with the lid. Wait until those test kernels pop (about 1–2 minutes). This indicates the oil is hot enough.

Add remaining kernels

Once the test kernels pop, quickly add the remaining 1 cup of kernels in an even layer. Cover the pot, leaving the lid slightly ajar or tilted a bit to allow steam to escape (this helps keep popcorn crisp).

Shake and listen

Every 15–20 seconds, hold the pot handles (use oven mitts if needed) and gently shake the pot back and forth over the burner to keep kernels from burning and ensure even heating. Keep the pot over medium-high heat.

Finish popping

Listen for popping. When popping slows to about 2–3 seconds between pops, remove the pot from the heat. Keep the lid on for 10–15 seconds to allow any final pops, then remove the lid carefully to avoid steam.

Seasoning and serving

Transfer to bowl and salt

Pour the popcorn into a large bowl. Immediately sprinkle 1 teaspoon salt evenly over the popcorn and toss gently to distribute. Tossing while warm helps salt stick.

Optional butter or toppings

If using melted butter: drizzle the 2 tablespoons melted butter evenly over the popcorn while tossing to coat. For Parmesan: sprinkle grated Parmesan (about 2 tablespoons) and toss. For sweet kettle-style: if using 1 tablespoon sugar, sprinkle it over the hot popcorn and toss quickly (note: sugar may melt slightly and create some stickiness). Adjust seasoning to taste.

Serve

Serve immediately for best texture. Leftover popcorn can be stored in an airtight container for up to 2 days but will lose crispness.
