Prepare pot
Select a large, heavy-bottomed pot with a tight-fitting lid (4–6 quart). Place the pot over medium-high heat and add the oil.
Test oil and kernels
To test oil temperature, drop in 2–3 popcorn kernels and cover. When those kernels pop (about 1–2 minutes), the oil is hot enough.
Pop
Keep the pot over medium-high heat. Once popping begins, occasionally lift and shake the pot (holding the lid in place) every 10–15 seconds to prevent burning and allow unpopped kernels to fall to the bottom. Leave the lid slightly ajar or crack it to let steam escape—this keeps the popcorn crisp.
Finish popping
When popping slows to about 2–3 seconds between pops, remove the pot from heat. Carefully tilt the lid to vent steam and pour the popcorn into a large bowl, leaving any unpopped kernels in the pot.
Season with salt
Immediately sprinkle the popcorn with 1 tsp fine sea salt (or to taste). Toss or shake the bowl to distribute evenly.
Optional finishing (butter, cheese, sweet or spice)
Butter option
If using melted butter: drizzle 2 tablespoons melted unsalted butter over the popcorn in a thin stream while tossing or stirring with a large spoon. Toss thoroughly to coat evenly, then taste and add more salt if needed.
Parmesan (savory) option
For cheesy popcorn: after adding butter (optional), sprinkle 2 tablespoons grated Parmesan and 1/2–1 tsp ground black pepper over the popcorn. Toss until evenly coated. Add additional salt sparingly because Parmesan is salty.
Spicy/smoky option
For smoky or spicy flavor: sprinkle 1 tsp smoked paprika or chili powder over the popcorn (use less for mild heat). Toss to distribute; combine with butter for better adhesion.
Sweet option
For a lightly sweet variation: while popcorn is warm, sprinkle 1 tablespoon brown sugar and toss immediately. For better adherence, toss after drizzling 1 teaspoon melted butter or use 1–2 teaspoons of vegetable oil sprayed lightly over the popcorn, then add the brown sugar and toss quickly.
Serve
Taste and adjust seasoning. Serve immediately for best texture. Store any leftovers in an airtight container at room temperature for up to 2 days (staleness increases after that).
