Prepare dry ingredients

In a medium bowl whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly distributed and aerated.

Prepare wet ingredients

In a separate bowl or large measuring cup whisk the whole milk, large egg, melted butter, and vanilla extract until fully combined and slightly frothy.

Combine wet and dry

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined — a few small lumps are okay. Overmixing will make dense pancakes. If batter seems very thick, add up to 2 tablespoons of additional milk to reach a pourable but still thick consistency.

Rest the batter

Allow the batter to rest for 5 minutes at room temperature so the baking powder can activate and the batter hydrates; this improves texture.

Heat the griddle

Place a nonstick skillet or griddle over medium heat. Add the neutral oil or additional butter and wipe with a paper towel to create a thin, even coating. The surface is ready when a few drops of water skitter and evaporate within a second or two.

Cook pancakes

Using a 1/4-cup measure, pour batter onto the hot griddle to form pancakes about 3-4 inches across. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook the second side 1–2 minutes more until golden brown and cooked through. Repeat, adding small amounts of oil or butter between batches to maintain a lightly greased surface. Yield: about 8 medium pancakes.

Keep warm

If making multiple batches, place finished pancakes on a baking sheet in a single layer and keep in a 200°F (95°C) oven for up to 20 minutes so they stay warm and slightly crisp at the edges without overcooking.

Prepare fruit

Rinse mixed berries and gently pat dry. Hull and quarter large strawberries if included. Slice the banana into 1/4-inch rounds just before serving to avoid browning.

Toast nuts (optional)

In a small dry skillet over medium heat, toast the chopped nuts for 2–3 minutes, stirring, until fragrant and lightly browned. Remove from heat and let cool briefly.

If using chocolate chips, sprinkle them on hot pancakes immediately after flipping so they soften and melt slightly into the surface.

Stack 2–3 warm pancakes per serving. Spread about 1 tablespoon of unsalted butter across the stack so it melts into the layers. Dollop 2 tablespoons of Greek yogurt on top, then arrange a generous spoonful (about 1/4 cup) of mixed berries and banana slices. Sprinkle toasted nuts and optional powdered sugar. Drizzle about 2 tablespoons of maple syrup over each stack (adjust to taste).
