Combine liquids and oats
In a medium mixing bowl or a 24-32 oz jar, whisk together 2 cups oatmilk, 1 tsp vanilla extract, 1 tbsp maple syrup (or honey), and a pinch of salt until combined.

Add oats
Stir in 1 cup rolled oats into the oatmilk mixture until evenly distributed.

Add chia and yogurt
Add 2 tbsp chia seeds and 1/2 cup plain Greek yogurt (if using). Stir thoroughly so chia seeds do not clump. Let the mixture sit for 2–3 minutes, then stir again to distribute chia evenly.

Incorporate Nutella
Warm 2 tbsp Nutella slightly so it becomes pourable: microwave in a small bowl for 10–15 seconds or stir vigorously. Swirl Nutella into the oat mixture (you can fully mix for uniform chocolate flavor or leave streaks).

Add banana
Mash 1 banana with a fork until mostly smooth (leave a few small chunks if you like texture). Fold the mashed banana into the oat mixture so it disperses evenly.

Finish and serve
Before serving, stir the oats once to check consistency. If too thick, stir in 1–2 tbsp oatmilk. Top with 2 tbsp pumpkin seeds and remaining 1/2 banana sliced. If desired, drizzle ~1 tsp warmed Nutella over the top for extra indulgence.
