Wash, peel, and dice
Wash all potatoes. Peel the russet (optional for Yukon Gold). Cut potatoes into 1/2-inch dice so they cook evenly — aim for uniform pieces. Place diced potatoes in a large bowl of cold water to remove excess starch and prevent browning; let sit 5 minutes, then drain and pat very dry with kitchen towels or paper towels.

Bring a medium pot of salted water to a simmer. Add the drained diced potatoes and simmer gently for 5 minutes to slightly tenderize without falling apart. Drain thoroughly and spread on a baking sheet or plate for a minute to steam off excess moisture (this helps them crisp).

Heat pan
Place a large heavy skillet (cast iron preferred) over medium-high heat. Add the vegetable oil and heat until shimmering but not smoking, about 1–2 minutes.

Sear potatoes
Add the drained, dried potato pieces in a single layer. Let them cook undisturbed for 3–4 minutes so the undersides brown. Use a spatula to turn and continue to cook, allowing more sides to brown, about 6–8 minutes total. If the pan gets too dry, add the butter and swirl to melt; it will help with browning and flavor.

Add onions and peppers
When potatoes are mostly golden and beginning to become tender, push them to one side of the skillet (or transfer briefly to a bowl) and add the diced onion and bell peppers to the hot pan. Cook, stirring occasionally, until softened and slightly caramelized, about 4–6 minutes. If needed, add a splash (1–2 tsp) of oil.

Combine and season
Return potatoes to the pan (if set aside) and mix with the softened onions and peppers. Add minced garlic and cook 30–60 seconds until fragrant. Sprinkle smoked paprika, dried oregano (if using), red pepper flakes (if using), kosher salt, and black pepper over the mixture. Toss well to coat and continue cooking for 2–3 minutes so flavors meld and potatoes finish tendering.
