Method
Base
- 1
Prepare the açaí blend
In a high-speed blender, combine the frozen açaí puree (200 g), coconut yogurt (1 cup), almond milk (120 ml), sliced banana, and ground flaxseed (1 tbs, optional).
- 2
Blend on high until smooth and thick. Use a tamper or pulse in short bursts to keep texture dense — you want a spoonable, thick consistency. If too thick, add almond milk 1 tablespoon at a time; if too thin, add a few ice cubes or a small piece of frozen banana.
- 3
Taste and adjust sweetness if desired: add a small amount of honey or agave (up to 1 tsp) and pulse briefly to combine.
- 4
Spoon the thickened açaí mixture into a shallow bowl, smoothing the top with the back of a spoon.
Toppings
- 5
Arrange toppings
Immediately arrange toppings on the açaí base: dollop almond butter (2 tbs) in a central line or small spoonfuls. Place sliced kiwi on one side and scatter mixed berries (3 oz) on another side for color contrast.
- 6
Sprinkle granola (1/2 cup) over one section for crunch, then add shredded coconut (1 tbs) and chia seeds (1 tsp) evenly across the bowl.
- 7
Garnish / Serve
- 8
Finish with fresh mint leaves and a light dusting of lemon or lime zest (1 tsp) to brighten flavors.
- 9
Serve immediately with a spoon so the granola stays crunchy. Leftover blended açaí can be covered and frozen for up to 1 week; add a splash of almond milk and re-blend to restore texture before serving.
