Grilled Swordfish and Ragout

Preparation and Cooking

    Marinate the Swordfish

    In a bowl, mix lemon zest, lemon juice, olive oil, minced garlic, salt, and black pepper. Add the swordfish steaks and marinate for at least 30 minutes.

    Cook the Sausage

    In a skillet over medium heat, cook the Italian sausage until browned and cooked through. Remove from skillet and slice into rounds.

    Prepare the Ragout

    In the same skillet, add the hearty greens and sauté for 3-4 minutes until wilted. Add the white beans and sausage rounds, stirring to combine. Cook for an additional 5 minutes. Season with salt and pepper to taste.

    Make the Compound Butter

    In a small bowl, mix butter, chopped basil, and chopped olives until well combined. Set aside.

    Grill the Swordfish

    Preheat the grill to medium-high heat. Remove swordfish from the marinade and grill for about 4-5 minutes on each side or until the fish is opaque and flakes easily with a fork.

    Serve

    Plate the grilled swordfish alongside the ragout of white beans and greens. Top each swordfish steak with a dollop of the compound butter.
