Method

Panna Cotta Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder and cold water. Let it sit for about 5 minutes until it becomes gel-like.

    Heat the Cream Mixture

    In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar dissolves and the mixture is hot but not boiling.

    Add Vanilla and Gelatin

    Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin until fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving molds or cups. Allow to cool at room temperature for about 15 minutes, then cover and refrigerate for at least 4 hours or until set.

Berry Compote Preparation

    Cook the Berries

    In a saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat, stirring gently until the berries start to break down and release their juices, about 5-7 minutes.

    Cool the Compote

    Remove from heat and let the compote cool. It will thicken as it cools. You can also refrigerate it to chill before serving.
