Hummingbird Cake

Method

Hummingbird Cake

Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

Mix Dry Ingredients

In a large bowl, sift together the flour, sugar, baking soda, cinnamon, and salt.

Combine Wet Ingredients

In another bowl, whisk together the vegetable oil, eggs, mashed bananas, crushed pineapple, and vanilla extract.

Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped pecans.

Bake

Divide the batter evenly among the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool

Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Lemon Hempseed Cake

Cream Butter and Sugar

In another bowl, beat the softened butter until creamy, then add sugar and continue to beat until light and fluffy.

Add eggs, lemon juice, lemon zest, and vanilla extract to the butter-sugar mixture and beat until well combined.

Combine Mixtures

Gradually add the dry ingredients to the wet ingredients until just combined.

Bake

Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Belizean Chocolate Pecan Pie

Preheat the Oven

Preheat your oven to 350°F (175°C).

Prepare Pie Crust

If using a homemade crust, roll it out and fit it into a 9-inch pie dish. If using store-bought, place it in the dish.

Mix Filling Ingredients

In a mixing bowl, combine sugar, corn syrup, cocoa powder, eggs, melted butter, and vanilla extract. Whisk until smooth.

Add Pecans

Stir in the chopped pecans until well distributed.

Pour Filling

Pour the filling into the prepared pie crust.

Bake

Bake for 50-60 minutes, or until the filling is set and a slight jiggle remains in the center.

Cool

Let the pie cool completely before slicing. Serve at room temperature or chilled.
