For the Skirt Steak

    Prepare the Steak

    Pat the skirt steak dry with paper towels. Rub both sides with olive oil, garlic powder, salt, and black pepper.

    Cook the Steak

    Heat a grill or skillet over medium-high heat. Sear the skirt steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steak from the heat and let it rest for about 5 minutes before slicing.

For the Roasted Fingerling Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash the fingerling potatoes and cut them in half lengthwise. Toss with olive oil, fresh rosemary, salt, and black pepper.

    Roast the Potatoes

    Spread the potatoes on a baking sheet in a single layer and roast for about 25-30 minutes, or until golden brown and tender.

For the Chimichurri

    Make the Chimichurri

    In a food processor, combine fresh parsley, garlic cloves, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until the mixture is well combined but still slightly chunky.

    Adjust Seasoning

    Taste the chimichurri and adjust seasoning with additional salt or red pepper flakes if desired.
