Method

Shrimp Preparation

  1. 1

    Make the Batter

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Mix well.

  2. 2

    Add Water

Gradually add cold water to the dry ingredients, whisking until the batter is smooth and has no lumps. The batter should be thick enough to coat the back of a spoon.

  3. 3

    Prepare the Shrimp

Dip each shrimp into the batter, ensuring it's fully coated. Allow any excess batter to drip off.

Frying Shrimp

  1. 4

    Heat the Oil

In a large, deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Shrimp

Carefully add the battered shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

  3. 6

    Drain Shrimp

Using a slotted spoon, remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

Fries Preparation

  1. 7

    Cut the Potatoes

Wash and peel the russet potatoes. Cut them into fries, approximately 1/4 inch thick.

  2. 8

    Soak the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps them become crispy when fried.

Frying Fries

  1. 9

    Heat the Oil

In another large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 10

    Fry the Potatoes

Drain the fries from the water and pat them dry with paper towels. Fry the fries in batches for about 4-5 minutes or until golden and crispy. Remove and drain on paper towels.

  3. 11

    Season the Fries

Sprinkle the fries with salt while they are still hot and toss to coat.

Serving

  1. 12

    Plate the Dish

Serve the crispy shrimp alongside the golden fries in a basket. Enjoy your shrimp basket!
