Method

Tart Crust

    Prepare the Tart Crust

    In a large mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the egg yolk and ice water, mixing until a dough forms.

    Chill the Dough

    Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Bake the Crust

    Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork and bake for 20-25 minutes until golden brown. Let cool.

Pastry Cream

    Heat the Milk

    In a saucepan, heat the milk and half of the sugar over medium heat until it just begins to boil.

    Mix Dry Ingredients

    In a separate bowl, whisk together the remaining sugar, cornstarch, and egg yolks until smooth.

    Combine Mixtures

    Slowly pour the hot milk into the egg mixture while whisking constantly to temper the eggs. Return the mixture to the saucepan.

    Thicken the Cream

    Cook over medium heat, whisking continuously until the mixture thickens and comes to a gentle boil. Remove from heat and stir in the vanilla and butter. Let cool before using.

Assemble the Tart

    Fill the Tart

    Spread the pastry cream evenly into the cooled tart crust.

    Arrange the Fruits

    Slice the kiwi and peaches. Arrange the strawberries, blueberries, kiwi, and peach slices decoratively on top of the pastry cream.

    Garnish

    Sprinkle fresh mint leaves over the top for garnish.
