Method

Prepare Raspberry Puree

    Cook the Raspberries

    In a small saucepan, combine fresh raspberries, sugar, and water. Cook over medium heat until the raspberries break down and the mixture comes to a simmer.

    Thicken the Puree

    Once simmering, reduce heat and stir for about 5 minutes until the mixture thickens slightly. Remove from heat and let cool.

    Strain the Puree

    After cooling, strain the mixture through a fine mesh sieve to remove the seeds, collecting the smooth raspberry puree. Set aside.

Prepare Cocktail

    Prepare the Cucumber

    Peel and thinly slice the cucumber. Set aside a few slices for garnish.

    Mix Puree and Lime Juice

    In a large glass or cocktail shaker, combine the raspberry puree and fresh lime juice. Stir well to mix.

    Muddle Cucumber

    Add the cucumber slices into the mixture and muddle gently to release the cucumber flavor.

    Combine with Ice and Water

    Fill the glass with ice, then pour in the tonic water and soda water. Stir gently to combine all ingredients.

Garnish and Serve

    Garnish the drink with the reserved cucumber slices, mint leaves, and a lime wedge on the rim.
