Method
Prepare the Pork Belly
- 1
Season the Pork
In a bowl, combine salt, black pepper, garlic powder, and paprika. Rub this seasoning mix all over the pork belly.
- 2
Cook the Pork
Heat olive oil in a large skillet over medium heat. Once hot, add the pork belly and sear on all sides until golden brown, about 10-15 minutes total.
- 3
Slow Cook
Reduce the heat to low, cover the skillet, and cook the pork belly for 2-3 hours, turning occasionally until the pork is tender. Remove from heat and let it rest before slicing.
Prepare the Tostada Base
- 4
Fry the Tortillas
In a separate pan, heat vegetable oil over medium-high heat. Once hot, add corn tortillas one at a time, and fry until crispy, about 1-2 minutes per side. Drain on paper towels.
Assemble the Tostadas
- 5
Slice the Pork
Once the pork belly has rested, slice it into thin pieces.
- 6
Build the Tostadas
On each crispy tortilla, layer sliced pork belly, followed by shredded lettuce, diced tomatoes, sour cream, sliced jalapeños, and chopped cilantro.
- 7
Serve
Serve the tostadas with lime wedges on the side for squeezing over the top.
