Panna Cotta Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder and cold water. Let it sit for about 5-10 minutes until the gelatin softens and swells.

    Heat the Cream Mixture

    In a medium saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir until the sugar has dissolved and the mixture is warm but not boiling.

    Add Gelatin

    Remove the saucepan from heat. Stir in the bloomed gelatin and vanilla extract until fully dissolved.

    Pour into Molds

    Pour the cream mixture into individual serving cups or molds. Allow to cool slightly, then cover with plastic wrap and refrigerate for at least 4 hours, or until set.

Berry Topping Preparation

    Prepare the Berries

    In a medium bowl, combine the mixed seasonal berries, granulated sugar, and lemon juice. Toss gently to coat the berries in the sugar and lemon juice, and let sit for about 15-20 minutes to macerate.

    Serve

    Once the panna cotta has set, remove it from the refrigerator. Top each panna cotta with a generous spoonful of the macerated berries just before serving.
