Pastrami Cured Cold Smoked Salmon

Prepare the Cure
In a bowl, combine pastrami seasoning, brown sugar, kosher salt, and liquid smoke to create a cure mix.

Cure the Salmon
Rub the cure mix all over the salmon fillet and wrap it tightly in plastic wrap. Refrigerate for 48 hours.

Cold Smoke the Salmon
After curing, remove the salmon from the wrap, rinse under cold water, and pat dry. Cold smoke the salmon for 2-3 hours using your preferred wood chips.

Slice the Salmon
Once smoked, slice the salmon thinly against the grain.
Whipped Cream Cheese

Whip the Cream Cheese
In a mixing bowl, combine cream cheese, sour cream, lemon juice, and chopped chives. Using a hand mixer, whip until smooth and creamy.

Assemble the Lox Board
On a large platter, arrange the sliced pastrami cured cold smoked salmon, whipped cream cheese, marinated vegetables, capers, and sprinkle everything seasoning over the top. Serve with bagels or crackers.
