Method

Cake Directions

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

  2. 2

    Mix Dry Ingredients

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

  3. 3

    Cream Butter and Sugar

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

  4. 4

    Add Eggs and Flavorings

Beat in the eggs one at a time, mixing well after each addition. Then stir in the milk, vanilla extract, and lemon zest until well combined.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

  6. 6

    Fold in Hemp Seeds

Gently fold in the toasted hemp seeds until evenly distributed.

  7. 7

    Bake the Cake

Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  8. 8

    Cool the Cake

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Icing Directions

  1. 9

    Prepare the Icing

In a mixing bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth and creamy.

  2. 10

    Ice the Cake

Once the cake is completely cool, drizzle the lemon icing over the top, allowing it to drip down the sides.

  3. 11

    Serve

Let the icing set for about 15 minutes before slicing and serving the cake.
