    Prepare the Ingredients

    Chop the bell pepper, onion, celery, and slice the green onions. Dice the chicken thighs and set aside. Peel and devein the shrimp if not already done.

Cooking

    Cook the Sausage

    In a large pot or Dutch oven over medium heat, add the Andouille sausage. Cook for about 5 minutes until browned. Remove sausage and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened. Add minced garlic and cook for an additional minute.

    Add Chicken

    Add the diced chicken thighs to the pot and cook until they are no longer pink, about 5-7 minutes.

    Combine Ingredients

    Return the cooked sausage to the pot. Stir in the cajun seasoning, salt, black pepper, chicken broth, and tomato sauce. Bring to a boil.

    Add Rice

    Once boiling, add the long-grain rice and bay leaves. Stir well, reduce heat to low, cover, and simmer for 20 minutes.

    Add Shrimp

    After 20 minutes, add the shrimp to the pot. Stir and cook for an additional 5 minutes until shrimp are pink and cooked through.

    Final Touch

    Remove bay leaves. Garnish with sliced green onions before serving.
