Marinate Chicken
In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 1 hour or overnight for best results.

In a shallow dish, add the flour. Remove chicken from buttermilk marinade, allowing excess to drip off. Dredge each piece in flour, pressing lightly to adhere. Set aside on a plate.

Carefully add the dredged chicken thighs to the hot oil, in batches if necessary to avoid overcrowding. Fry for about 6-8 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Once cooked, remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.

In a small bowl, mix mayonnaise and hot sauce until well combined. Adjust hot sauce to taste.

Toast the burger buns lightly if desired.

Spread a generous amount of hot sauce mayo on the bottom bun. Add a piece of fried chicken, followed by a leaf of lettuce, a slice of tomato (cut into rounds), and pickles. Top with the upper half of the bun.
