Method

Fried Chicken

    Marinate the Chicken

    In a large bowl, combine chicken pieces and buttermilk. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Coating

    In another bowl, mix flour, salt, black pepper, garlic powder, onion powder, and cayenne pepper thoroughly.

    Coat the Chicken

    Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture until well coated. Shake off excess flour.

    Heat the Oil

    In a large, deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chicken

    Carefully add chicken pieces to the hot oil, frying in batches if necessary. Cook for about 15-18 minutes or until golden brown and internal temperature reaches 165°F (75°C).

    Drain the Chicken

    Remove the fried chicken and place on a wire rack or paper towels to drain excess oil.

    Boil the Potatoes

    Peel and cube the potatoes. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Housemade Hot Sauce

    Blend the Ingredients

    In a blender, combine fresh hot peppers, garlic cloves, white vinegar, and salt. Blend until smooth.

    Store the Sauce

    Transfer the sauce to a jar and let it sit for at least 1 hour before serving to let the flavors meld.
