Chocolate Mousse

Melt the Chocolate

In a heatproof bowl, combine the semisweet chocolate chips. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Whip the Cream

In a large mixing bowl, pour in the heavy cream and add the granulated sugar and vanilla extract. Using an electric mixer, beat the cream until soft peaks form. Be careful not to over-whip.

Whisk the Egg Whites

In another clean bowl, whisk the egg whites with a pinch of salt until they form stiff peaks. This should take about 3-5 minutes.

Combine Mixtures

Gently fold the melted chocolate into the whipped cream until fully incorporated. Then, carefully fold in the whipped egg whites, one-third at a time, being cautious not to deflate the mixture.

Chill the Mousse

Spoon the mousse into serving cups or bowls and refrigerate for at least 2 hours, or until set.

Berry Compote

Prepare the Berries

Rinse the mixed berries under cold water and drain well. If using strawberries, hull and cut them in half.

Cook the Compote

In a saucepan, combine the mixed berries, granulated sugar, lemon juice, and water. Cook over medium heat, gently stirring until the mixture starts to bubble. Reduce heat and let simmer for about 10-15 minutes, or until the berries have softened and the sauce thickens slightly.

Cool the Compote

Remove the saucepan from heat and let the berry compote cool to room temperature. It can be served warm or chilled.
