For the Chicken

For the Sliders

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, whisk together the buttermilk, salt, black pepper, garlic powder, onion powder, and paprika until well combined.

  2. 2

    Marinate the Chicken

Add the chicken thighs to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Preparing the Coating

  1. 3

    Mix the Coating

In a separate bowl, combine the all-purpose flour and cornstarch. Mix well to ensure an even coating.

Frying the Chicken

  1. 4

    Heat the Oil

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Coat the Chicken

Remove the marinated chicken from the buttermilk and let excess drip off. Dredge each piece in the flour and cornstarch mixture, ensuring an even coating.

  3. 6

    Fry the Chicken

Carefully place the coated chicken in the hot oil. Fry in batches for about 5-7 minutes per side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

  4. 7

    Drain the Chicken

Once cooked, remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.

Assembling the Sliders

  1. 8

    Prepare the Buns

Slice the slider buns in half and lightly toast them if desired.

  2. 9

    Build the Sliders

On the bottom half of each slider bun, place a lettuce leaf, followed by a piece of fried chicken, a slice of tomato, pickles, and a drizzle of mayonnaise and hot sauce to taste.

  3. 10

    Serve

Top with the other half of the bun and serve immediately while hot.
