Fondant Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

    Whisk Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is pale and thick, about 3-4 minutes.

    Combine Mixtures

    Pour the melted chocolate mixture into the egg mixture. Stir until well combined. Add the vanilla extract and mix again.

    Add Flour

    Sift the all-purpose flour over the mixture and gently fold it in until just combined. Be careful not to overmix.

    Preheat Oven and Prepare Ramekins

    Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

    Bake Fondant

    Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes. The edges should be firm, but the center should still be soft.

    Cool and Serve

    Remove from the oven and let them cool for 1 minute. Invert each ramekin onto a serving plate. Serve immediately with a scoop of vanilla ice cream.
