Method

Hush Puppies

    Prepare the Batter

    In a large bowl, mix together the cornmeal, all-purpose flour, baking powder, salt, and sugar.

    Combine Wet Ingredients

    In another bowl, whisk together the milk and egg until well combined. Add the chopped green onions.

    Mix Together

    Gradually stir the wet ingredients into the dry ingredients until just combined. Do not overmix.

    Heat Oil

    In a deep skillet or fryer, heat the oil to 350°F (175°C).

    Fry the Puppies

    Using a spoon or small scoop, carefully drop the batter into the hot oil. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Pimento Cheese

    Mix Ingredients

    In a mixing bowl, combine the sharp cheddar cheese, cream cheese, mayonnaise, pimentos, garlic powder, onion powder, salt, and black pepper.

    Blend Until Smooth

    Using a hand mixer or food processor, blend the mixture until smooth and creamy. Adjust seasoning with salt and pepper to taste.

    Chill

    Refrigerate the pimento cheese for at least 30 minutes before serving to let the flavors meld.

Red Pepper Jam

    Prepare Peppers

    Remove the stems and seeds from the red bell peppers and finely chop them.

    Cook Jam Mixture

    In a saucepan, combine the chopped red bell peppers, sugar, and apple cider vinegar. Bring to a boil over medium heat.

    Add Pectin

    Stir in the pectin and return to a rolling boil for 1 minute, stirring constantly.

    Cool and Store

    Remove from heat and let cool slightly before transferring to sterilized jars. Store in the refrigerator.
