    Wash the Greens

    Thoroughly rinse the kale and collard greens under cold running water to remove any dirt or grit. Shake off excess water and chop into bite-sized pieces.

    Prepare Aromatics

    Chop the onion and mince the garlic, setting them aside for later use.

Cooking

    Sauté Aromatics

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

    Add Greens

    Add the chopped kale and collard greens to the pot. Stir to combine with the onion and garlic mixture.

    Add Broth and Seasonings

    Pour in the vegetable broth, apple cider vinegar, red pepper flakes, salt, and black pepper. Stir well to evenly distribute the seasonings.

    Braised Cooking

    Bring the mixture to a gentle simmer. Cover the pot and allow the greens to braise for about 30 minutes, stirring occasionally, until they are tender and flavorful.
