Method

Prepare the Grits

    Cook the Grits

    In a medium saucepan, bring 3 cups of water and 1 tsp of salt to a boil. Gradually stir in 1 cup of grits. Reduce heat to low and simmer, stirring occasionally, until thickened (about 20-25 minutes).

    Add Butter and Cheese

    Once the grits are cooked, stir in 2 tbs of butter and 1 cup of cheddar cheese until melted and creamy. Keep warm.

Cook the Andouille Sausage

    Sauté the Vegetables

    In a large skillet, heat 1 tbs of olive oil over medium heat. Add 1 diced onion and 1 diced bell pepper. Sauté for 5 minutes until softened.

    Add Sausage and Seasoning

    Slice the 1 lb of Andouille sausage and add it to the skillet. Cook for about 5-7 minutes until browned. Stir in 2 minced garlic cloves, 1 tbs of Cajun seasoning, and 1 tsp of black pepper. Cook for an additional 2 minutes.

Serve the Dish

    Assemble the Bowl

    Scoop a generous portion of the cheesy grits into a bowl. Top with the Andouille sausage mixture.

    Garnish with sliced green onions and drizzle hot sauce over the top to taste.
