Boudin Preparation

1. Prepare the Short Ribs

Season the short ribs with salt and pepper. In a large pot, cover the short ribs with water and add bay leaves, thyme, and black peppercorns. Simmer for about 2-3 hours until tender, then let cool.

2. Cook the Aromatics

In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until translucent, about 5-7 minutes.

3. Prepare the Mixture

Once the short ribs are cool, remove the meat from the bones and chop finely. In a large mixing bowl, combine the chopped short ribs, pork fatback, cooked rice, sautéed onions and garlic, cayenne, and salt. Mix well.

4. Stuff the Casings

Rinse the pork casings in cold water. Stuff the casing with the boudin mixture using a sausage stuffer. Twist into links and tie off the ends.

5. Cook the Boudin

Bring a pot of water to a simmer. Add the boudin links and poach for about 20-25 minutes until cooked through. Remove and let cool.
