Focaccia Preparation

Activate the Yeast
In a bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Toppings
Once the dough has risen, punch it down and add the minced garlic and chopped rosemary. Mix well.

Shape and Second Rise
Spread the dough onto a greased baking sheet and use your fingers to create dimples. Cover and let it rise for another 30 minutes.

Bake
Preheat the oven to 425°F (220°C). Drizzle with olive oil and sprinkle with sea salt before baking for 20-25 minutes until golden brown.

While the focaccia is baking, arrange the sliced ham, honey, whole grain mustard, pickles, and fresh arugula on a serving platter.
