Brining the Ham
In a large bowl, combine the salt and brown sugar to create a brine. Add the black pepper, garlic powder, and ground mustard, mixing well.

Applying the Brine
Rub the brine mixture all over the country ham, ensuring it is well coated. Place the ham in a large, non-reactive container.

Adding Water
Pour the water over the ham, making sure it is fully submerged. If necessary, use a weight to keep the ham submerged.

Curing Process
Cover the container and refrigerate for 18 months. Turn the ham every few weeks to ensure even curing.

Final Preparation
After 18 months, remove the ham from the brine, rinse it under cold water, and let it dry thoroughly before slicing.
