Add Sausage and Tomatoes
Slice the Andouille sausage and add it to the pot along with the diced heirloom tomatoes. Stir to combine.

Combine Ingredients
Return the duck legs to the pot. Add the white beans, thyme, bay leaves, and enough water to cover the ingredients. Bring to a simmer.

Slow Cook
Cover the pot and reduce the heat to low. Let it simmer gently for about 1.5 to 2 hours, or until the duck is tender and the flavors are well combined.

Final Adjustments
Taste and adjust seasoning with more salt and black pepper if necessary. Remove the bay leaves before serving.
